Skinny Dippers...

...or as I like to call them, "Heaven on a Stick."

When I lost 30 pounds on Weight Watchers before my wedding, Skinny Cow ice cream sandwiches were one of my staple treats. I think they were 3 points a piece. Later, I tried the fudge bars. I have a weakness for fudge bars. And the Skinny Cow fudge bars are rich, creamy, and very satisfying.

Let me tell you, Skinny Cow has done it again. Their newest ice cream treat, Skinny Dippers, is an ice cream bar dipped in chocolate. You can choose from a box of vanilla and caramel dippers or vanilla and mint dippers. But why choose? Buy a box of each.



What I have always liked about Skinny Cow ice cream is that they do not use artificial sweeteners, unlike most foods marketed towards dieters. (They do have a no sugar added sandwich made with Splenda, if that's your thing.) I abhor the taste of artificial sweeteners (and don't get me started on the fact that I think that the least processed foods are healthier).

I digress.

Each bar has only 80 calories and 3 grams of fat (and only 1 point on Weight Watchers, yippee!). With stats like that you would think that they taste like the cardboard box they come in.

Oh no, they are just glorious. I'm not exaggerating. The caramel is so rich and creamy. The vanilla is simple and satisfying. And the mint tastes like a Girl Scout cookie.

I am also thrilled that I can give these to my diabetic family member. Since they only have 11 grams of carbs each, they can fit into her meal regiment.

A coworker suggested I bring in the box to share. Yeah right, I'm too selfish for that. I did bring her one caramel pop and she loved it. She's putting Skinny Dippers on her shopping list.
